BREAD MALAI KOFTA

Another alternate way of making kofta..



For kofta..

Grind 10 slices of wheat bread..Trim the edges..Make a fine powder...For this,add chilly powder,salt,turmeric powder,minced onions and a tsp of yogurt..Don't add water..Mix everything..To a stiff dough..Shape them into balls..Deep fry in oil..Spread on a tissue paper..

 For masala gravy:
Grind 1 onion,tomato,ginger garlicto fine paste.make a thick paste of cashews too..
In a pan,add 2 tsps of ghee,cardamom seeds,cinnamon,grinded onion paste..Saute until raw smell goes..Add garam masala,salt,chilly powder,fresh cream, cashew paste,turmeric powder, coriander leaves..Mix well..And simmer for 2 minutes.. Add kofta balls,Finally garnish with cream ..Yummy BREAD MALAI KOFTA IS DONE..

Add a layer of yogurt,(sugar is slightly added in yogurt)..
Add oats flakes,then washed and chopped strawberries,then oats flakes ,again a layer of yogurt ,, finally drizzle with caramel syrup.. You're done... Slightly stir and it's ready to taste...πŸ“πŸ“

DIL PASAND BAKERY STYLE

Bakery style eggless Dil Pasand (homemade)and buns..It's my all time favorite..Which is not available abroad..Have to satisfy my craving .. as was due on my list for long long time..I tried this first time..no doubt in taste..πŸ˜‹πŸ˜‹..Homemade is always fresh and healthy, hygiene..πŸ’πŸ’πŸ’πŸ’πŸ°πŸ°πŸ°




Ingredients

For Dough

All purpose flour - 2 Cups,Milk / Water - 1/4 Cup To activate yeast
Sugar - 2 Tbsp
Active Dry Yeast - 2 tsp
3/4 TbspWater - 1/4 Cup
Salt a pinch
Water to knead the dough -
Olive oil - 3 Tbsp

For Stuffing

6 to 8 tbsps powdered sugar
1 cup dry coconut powder
Cardamom powder just a pinch
Tutti frutti 1/2 cup.




First in a small bowl..Add active dry yeast,light warm water..( hot water will not activates the yeast) and a tsp of sugar..Mix and leave it for 5..10 minutes..You see foamy texture..To this,add oil ,milk..whisk well to foamy..
In a mixing large bowl..Add flour,salt and mixture of yeast and make a smooth dough..Add water if necessary..Not too much.
Leave the dough..For 1 hour..After one hour it's double the size..
For filling in a bowl,mix tutti frutti,sugar, coconut, cardamom..Keep ready.
Take a big size ball and roll like chapati... Should be little thick..
Add the filling bit more .. Spread gently on top..
Roll one more chapati size..And cover it ..Apply water on edges to seal completely..Brush them with butter on top.
Preheat oven for 180 deg F.
Place it in oven tray ..And bake for 20 minutes..To light brown...

CURD SANDWICH

Exclusively and perfect for kids lunch boxes..Fresh veggies, finely chopped marinated well in hung yogurt..With mild spices..




CURD SANDWICH

Ingredients:

8 slices of bread
¾ cup hung Curd( from 1 1/2 cup curd)
1 onion chopped
1 tomato chopped
½ capsicum chopped
Sweet corn 1 tbsps
1/2 Carrot finely chopped
 green chilly and finely chopped coriander leaves
salt to taste
1/8 tsp red chilly powder
1/8 tsp chaat masala

Olive Oil/butter/ghee to grease the bread lightly




Take all the chopped vegetables in a wide pan.Add hung curd to it.
Mix all the spices and salt and mix properly.
Grease bread slices lightly on one side. Apply a thick layer of hung curd mixture on bread.
Grill in a sandwich maker or Tawa.

Serve hot with green chutney or tomato ketchup.

Homemade white and dark chocolate..melt and mould it into heart shape..simplest!! Done in minutes..☺☺☺



1 cup white Chocolate Chips
1 cup regular chocolate.. I used cadburys dairy milk chocolate.
Pink sugar sprinkles
Chocolate mould sheet



Put the chocolates in a two different microwave safe bowls.
On the base of chocolate mould ..sprinkle pink sugar..keep ready
Melt the chocolates for about 30 to 40 seconds..mix well until it melts..
Gently drop the melted chocolates into the moulded sheets..leave it for 20 minutes @room temperature..
Place them upside down on a plate..enjoy beautiful homemade chocolates... 🍬🍬🍬🍬

So easy just 3 Ingredients used..No baking..



Few strawberries
Frosting cream
Graham crackers.or can use anything for base.

Cut the bottom and top of strawberries.
Fill in frosting cream..Place the top portion on top of cream.
Put some mini chocolate chips for eyes or can use whole pepper..Done..Cute Santa's ready..

KODBELE



Ingredients:

4 Cups Rice Flour
1/2 Cup Chiroti Rava / Fine Semolina
3/4 Cup roasted peanuts
1/2 Cup roasted Split Dalia
3/4 Cup roasted dry coconut powder
Pinch of asafeotida and turmeric
2 Tbsps of red chillie powder
Sesame seeds 1/4 tsp (optional)
Salt as needed
Water as required
Oil


First,in a grinder,make a dry fine powder of peanuts, Split dalia and coconut powder.No water .
In a large mixing bowl, add rice Flour,grinded powder,salt, chillie powder, turmeric, asafeotida,semolina...Combine well by adding water as required to make stiff dough...Don't add too much water.

Take lumps of dough and roll into long thin noodles then shape them into round as a circle.
Heat oil and deep fry at a medium heat to golden brown color.Flip them on intervals.
Drain on a paper towel. Let it cool,Store in an airtight container..

BREAD JAM ROLLS

Was so amazed! how quick and easy these little roll-ups are to make. I made up a couple batches in no time at all.Bread jam rolls has been always one of my favorite breakfast food items.
With the kiddos being home from school on break I had the opportunity to actually take the time to make some hot breakfasts for them. Sort of easy recipe.. slightly flattened 🍞 bread, topped with butter and any kind of fruit jam u like.. and roll and roast it..



Ingredients:
Wheat bread 6 slices
Fruit jam
Butter as needed

Cut the edges of the bread.
Roll them flat with the help of rolling pin.
Apply butter and jam,roll them.Seal the edges with milk.
Heat a pan, smear some butter, slightly roast them..done!!

STUFFED POTATOES



Best evening snack..on a rainy day or winter..I tried this first time.. almost, tasted like potato cutlets..
Potato and onion mixed curry stuffed and coated with left over Dosa batter.. sounds different right..! Well it's something unique in taste too..

Ingredients:

Leftover dosa batter

For potato curry:

6 medium boiled potatoes
1 Big Onion, chopped
1-2 tbsp. oil
1/2 tsp. mustard seeds
1 tsp. bengal gram
1 tsp. black gram
3-4 green chillies, chopped
Few curry leaves
turmeric powder/lemon juice/grated coconut as per taste
Chopped coriander leaves
Salt to taste
Method:
Heat oil in a saucepan. Add mustard, allow to splutter, add bengal gram, black gram, green chillies.
Fry till light brown, then add curry leaves, turmeric, onions. Fry till the onions becomes translucent.
Add boiled and mashed potatoes, coconut, salt and mix well for 5 minutes.
Remove from the heat, add lemon juice, coriander leaves and mix well.
Allow it to cool. Make small balls and dip them in dosa batter.. deep fry in hot oil..
Serve with ketchup and cup of tea/coffee.

NIPATTU/RICE CRACKERS

INGREDIENTS:

rice flour – 1 cup

semolina – 1 tbsp

peanuts – 3 tbsp

fried gram or hurigadale – 2 tbsp

Dry coconut powder 3 tbsps

red chili powder – 1/2 to 3/4 tsp as per taste

Salt, Asafeotida and turmeric as required

oil – 2 tsp for adding to the dough and more for deep frying the nippattu



METHOD:

Roast dry peanuts and hurigadale and grind coarsely along with coconut powder.

Mix this in a bowl..With rice flour,semolina and all other ingredients mentioned above to make a soft stiff dough.Add 2 to 3 tsps of oil for extra crispness.Dont add excess water.
Roll them into Chapati size,take any small lid and shape them.
Deep fry in oil to nice crisp brown color.
Spread them on a paper towel ..Store in a container once it cools down.

THIN SEV
A snack recipe with a cup of tea or hot coffee.



Rice Flour+BESAN 1/2 cup each
1 tsp red chilli powder.
Salt, turmeric powder as per taste.
Oil.
Water as needed.

Mix everything adding little water..Make a stiff dough.
Heat oil in a pan ,Fill the dough in a sev press with small holes. Gently press into hot oil, and fry lightly brown.
Drain on paper towel. Store in an airtight container when cool.

RAJMA RICE PULAV/KIDNEY BEANS RICE

Rajma Rice



For 1 Cup cooked Basmati Rice,
In a pan,add 2 Tbsps of ghee
Saute onions till soft
Gg paste,red chilli powder, garam masala powder I tsp each,and pav Bhaji powder.
Add cooked rajma beans, turmeric powder,salt .
Garnish with coriander leaves.

KAJU MASALA

Kaaju Masala



1 cup Cashew Nuts (halved or broken or whole)
1 Onion, Tomato chopped
Cinnamon powder 1/2 tsp
Ginger garlic paste
Chopped 2 Green Chilli,
1/2 teaspoon Red Chilli Powder
1 teaspoon Cumin-Coriander Powder,
A pinch of Turmeric Powder,
optional1/2 cup Milk and fresh cream
Water as needed
Kasuri Methi,  Coriander Leaves, for garnishing
Oil/ghee 1 tsp each
Salt to taste

Roast cashews to light brown.
Grind 3/4 cup of cashews, ginger garlic paste, coriander powder, green chillies, cinnammon powder, onion and tomato to fine puree.
To a sauce pan,add oil+ghee,add the puree and cook for about 5 minutes.
Add salt, kasuri methi, turmeric powder and fresh cream and milk.Atlast add left over1/4  cup of cashews to the curry.mix well.
Cook for a minute.. Ready to serve..
