CARROT SWEET ROLLS

A kind of sweet dish similar to Carrot Halwa,but only difference is instead of milk,I used wheat flour for thickness just to shape them as carrot rolls.Another good thing is I did'nt use much ghee to this,so can be considered as a another low calorie sweet dish.




Ingredients:My serving gives around 8 to 10 rolls.

Fresh Carrots 4( peel and grate the carrots)
Sugar 1 Cup
Wheat Flour( as required,may be around 1/4 Cup)
Oil and Butter 1 Tbsps each( may increase as per your taste)
Water 1/4 Cup(optional)
A pinch of cardamom powder
Dry coconut powder 1/2 Cup

Method:

1. Wash,peel the skin and grate the carrots to thin.Melt the butter with oil in a
    heated thick bottemed pan.Add the carrots and cook them till they are soft
    enough.May add water if required.




2. Add the sugar,Keep stirring as the sugar dissolves completely in the cooked
    carrots.Now add the wheat flour to get thick consistency just enough to shape
    them.Finally sprinkle with cardamom powder.


3. Turn off the heat,allow it cool for few mins.Shape them into round and gently
    roll them in the coconut powder.


4. If tired of making the carrot halwa,try this method it's quite unique and very tasty.
