MIRCHI BAJJI

A excellent appetizer and an evening refreshment Mirchi Bhajji.Long green Chilli peppers with roasted and grounded peanut,cumin seeds and few more spices stuffed in.Since most of them use potatoes for filling,mine gives a distinct taste as I used peanuts.The peppers were too long,so I cut them into half size.


Ingredients:

Long Green Peppers 6

For Stuffing:

Crushed peanuts( roasted) 2 Tpa
Cumin seeds 1 1/2 Tsp
Dalia or split chick peas 3 Tsos
Asafeotida 1/2 Tsp
Coriander seeds 1/2 Tsp
Salt little.

For Coating or Batter

Gram Flour-1 cup
Rice powder-1/4 cup
Water-1/2 cup
Red Chilli powder 1/4 Tsp
Salt to taste

Oil for deep fry.

Method:

Grind all the spices for filling to coarse.




Partially slit the long green peppers and stuff the grinded spices just a 1/2 tsp.


Mix the gram flour and rice flour adding little quantity of water with red chilli powder and salt.The batter should be medium consistency.
Heat the oil on medium heat.Dip the stuffed long peppers into the batter for coating.
Deep fry them in the oil to crispy brown.

HOMEMADE TOMATO SOUP

A simple soup that can be made in no time and has super delicious flavor, that is none other than popular tomato soup. Nothing tastes like home made fresh tomato soup which is a great appetizer with easy method. Add more crushed black pepper for a real spicy taste to the blended tomato purée,and bit of fresh cream on top of it,gives mouthwatering hot soup.





Ingredients:My serving gives is for two people

Large size Tomatoes 5(diced)
Onion 1
Grated ginger 1/4 tsp
Grated garlic 1/2 tsp
Green chili 1
Butter 2 Tbsps( May add more for extra buttery taste)
Crushed black pepper powder as per taste
A Cup of Water
Salt to taste
Bread Crountons(just few pieces,fried them with little tsp of butter)
Fresh heavy cream for topping

Method:

1. Heat the butter, in a large saucepan and saute the tomatoes,onion,Chilli ginger,garlic until they are translucent, about 5 minutes.Add a cup of water to this,make sure they are not overcooked.Turn off the heat and allow it cool.






2. Pour this into jar to make fine tomato purée.Strain this purée into large bowl.
    Boil the purée in a heated pan on low heat for just 2 mins.Bring down from heat,
    add salt,more butter and heavy cream( as per your taste).


3. Before serving drizzle with black pepper powder,fresh cream and fried bread
    bread croutons for additional taste.





My Tip: Since this soup is more on sweeter,adding more pepper is really gives a
              soothing relief.

CARROT SWEET ROLLS

A kind of sweet dish similar to Carrot Halwa,but only difference is instead of milk,I used wheat flour for thickness just to shape them as carrot rolls.Another good thing is I did'nt use much ghee to this,so can be considered as a another low calorie sweet dish.




Ingredients:My serving gives around 8 to 10 rolls.

Fresh Carrots 4( peel and grate the carrots)
Sugar 1 Cup
Wheat Flour( as required,may be around 1/4 Cup)
Oil and Butter 1 Tbsps each( may increase as per your taste)
Water 1/4 Cup(optional)
A pinch of cardamom powder
Dry coconut powder 1/2 Cup

Method:

1. Wash,peel the skin and grate the carrots to thin.Melt the butter with oil in a
    heated thick bottemed pan.Add the carrots and cook them till they are soft
    enough.May add water if required.




2. Add the sugar,Keep stirring as the sugar dissolves completely in the cooked
    carrots.Now add the wheat flour to get thick consistency just enough to shape
    them.Finally sprinkle with cardamom powder.


3. Turn off the heat,allow it cool for few mins.Shape them into round and gently
    roll them in the coconut powder.


4. If tired of making the carrot halwa,try this method it's quite unique and very tasty.

KACHORI

Kachori is yet another one of those Indian Chaats that is appealing- so crunchy.A deep fried pastry snack with onions,green peas and few Indian spices stuffed into it.Very delicate chaat to prepare while filling the veggies,has to be cooked on low flame.Indeed kachoris are so difficult to resist,the best combination for me is tangy tamarind sauce.





Ingredients:  makes 10 kachori's

For the dough
Maida(All purpose flour) -- 2 cups
Salt -- 1/4 tsp
Ghee--2 Tbsps
Water as needed.

For the stuffing
Onion -- 1 large (finely chopped)
Frozen Green Peas 1/4 Cup
Cumin seeds - 1/4 Tsp
Crushed Ginger-Garlic Paste -- 1 Tsp
Coriander Powder -- 1/2 Tsp
Chilli Powder -- 1 1/2 tsp
Cooking Oil -- 1 Tbsp
Salt -- to taste
Chopped Cilantro

Method:

1. In a bowl add water little by little with All Purpose Flour,salt and butter,to a bit
    semi- stiff dough.Keep aside atleast for half hour.


2. Heat oil in a pan,add cumin seeds,g&g paste and onions.Saute them fir couple of
    minutes to transculent.Add the spice powders with salt,finally add the frozen
    green peas and cilantro.


3. Equally divide the dough into approximate 10 to 12 medium lemon size balls.
    Make like cup size from each dough,and stuff about just a tsp of the cooked
    onions.Gently cover the dough by all sides or you can just roll them with the
    help of rolling pin.Make the the base of dough is bit thicker than the edges,
    Since the stuffing should not spill out.Seal all the edges.




4. Drop them thoroughly in a heated oil,turn them upside down to crispy golden
    brown.Deep fry them on a low flame.

SWEET CORN CHAAT

A simple healthy chaat recipe made from sweet corn,onions,chat masala etc.
Preparing Chaats is actually very easy since you only need to assemble everything together and there is no actual cooking required.One good thing is that you can personalize according to your taste.Trust me you are going to love it,I definitely do.A great filling with one serving for breakfast or as a quick snack.








Ingredients: My serving yields to two people.

Whole Sweet corn - 1 cup( I used frozen pack)
Onion - 1 Finely Chopped
Chaat masala - 1/4 tsp
Red chilli powder - 1/8 tsp
Butter - 1 Tsp
Fresh Lemon juice - 1 tsp
Black Pepper powder - 1/8 Tsp
Sev - 1 tsp
Salt - to taste
Cilantro leaves for garnish
Green Chilli Sauce - two drops (optional)

Method:

1. In a microwave safe bowl,add little water and cook the sweet corns for about
    two minutes.




2. Drain the excess water,in a separate mixing bowl,mix all the above items except
    sev.Garnish them with cilantro and sev and add fresh squeezed lemon juice.

ONION BUNS/KHARA BUNS



Soft,fluffy and perfectly baked onion buns with less ingredients.Can say almost tasted and smelled like a bakery khara buns and similar to Bagels.Never tried this before,made this first time just about a cup as a sample try of All Purpose Flour and wheat flour mixed together with little minced onions in it,was able to make just five buns.





Ingredients:

All Purpose Flour 1 Cup
Wheat Flour 1/2 Cup
Finely Chopped Onion 1
Crushed Garlic Pod 1
Active Dry Yeast 1/2 Tsp
Green Chillie 1
Chopped Coriander
Salt to taste
Baking Soda 1/8 tsp
Warm Milk 1/4 Cup
Melted Butter 2 Tbsps



Method:

1. Mix the warm milk with yeast in a small bowl and set aside for about 15 mins till it
    becomes frothy.


2. In a large bowl,mix the flours together with salt,onions,Chilli,chopped coriander,
    garlic and  a Tbsp of butter.


3. Now add the frothy warm milk to the flour without adding water.Leave the dough
    for atleast an hour.Its almost double the size after sometime.






4.  Preheat oven to 190 deg,make a balls from the dough.Place them on a baking
     tray and make sure to leave enough space among each dough,as they are
     sure to increase their size.Brush them with butter on top of each dough,bake
     them atleast for 20 to 25 mins until golden brown.

DRY FRUITS PULAV

A finest and elegant rice dish recommended by my brother,he happened to taste it in a HOTEL TAJ VIVANTA.A simple pulao is made rich in taste with dry fruits and nuts and slightly added spice to it. I made tomato & onion raitha as a side dish, it was excellent however you could also try other North Indian gravies like dal makhni, masala curry etc. This is more like using fruits and nuts instead of vegetables and this comes out like restaurant style pulao.

Ingredients:

Basmati Rice 1 Cup(uncooked)
Onion 1( cut lengthwise)
Cashews/Raisins/Almonds 1 Tsp Each
Bay Leaves/Cloves/Cinnamon Sticks,few of them
Grated Ginger & Garlic Paste 1/4 Tsp Each
A few Saffron Strands soaked in warm milk
Ghee 2 Tbsps
Oil to deep fry the onions
Salt to taste
Water 1 1/2 Cups

Method:

1. Cook the rice in a cooker,and slightly roast the nuts with little ghee in a small pan.

2. Deep fry the onions to mild golden brown.Spread them into a paper towel to
    remove excess oil.

3.  Again a pan,add ghee with bay leaves/ cloves,cinnamon sticks,ginger garlic
     paste and saffron stands with soaked milk.

4.  Mix well with the cooked rice,roasted nuts,deep fried onions and salt.


5.  To be served well with any raitha's,for me dal makhni would be is perfect choice.

SEMOLINA & SPLIT CHICKPEA FLOUR LADOO


Normally all sweets does contain ghee which has more calories,but this is absolutely a low calorie sweet dish.Roasted chickpea flour(Hurgadle pudi) mixed with semolina,sugar,coconut and little quantity of milk.So easy to try,I made just one cup each so yields to about 12 to 14 ladoo's and can be stored in an air tight container for 5 to 6 days.


Ingredients:

Roasted Dalia( chick pea) 1 Cup
Fine Sooji or Semolina/Chiroti Rava 1 Cup
Dry Coconut I Cup
Powdered Sugar 1 Cup
Warm Milk 1/4 Cup
1 Tsp of ghee
Almond powder 1 Tsp
Cardamom powder to taste
Cashews and raisins

Method:

Roast the cashews and raisins with little ghee,in the same pan roast the sooji for atleast 2 mins.In a separate pan roast the dhalia and coconut powder till light brown,but again this is optional,as it can stored for 3 to 4 days.



Grind the dhalia and coconut to fine powder.Add sugar,grinded powder,roasted cashews and raisins almond pwd,ghee and cardamom powder,mix well.


To this,add a warm milk little by little,just to make Ladoo.Dont add too much milk.
Shape the Ladoo with your hands.
