CORIANDER CHUTNEY

Coriander chutney is something unique in taste...myself happened to try this recipe from my mother.And as a matter of fact,green leaf veggies are very rich in nutrients,but I was not aware that coriander leaves has high contents of iron too.
This chutney is best combination for rice and other breakfast recipe.



Ingredients:

1 Fresh Bunch of Coriander Leaves
2 Tbsps of a Dry Coconut
1 Tsp of Cumin Seeds
1  Tsp of Tamarind Paste
4 to 5 Green Chilli
1 Tsp of Jaggery
Salt

For Seasoning:

1 Tsp Oil,mustard seeds,turmeric powder and Asafeotida.

Method:

Clean the coriander leaves and strain the water.Grind all the items listed above ( not the seasoning )to fine paste.Add little water.


In a heated pan,Saute the grinded chutney for about 5 mins...
In other pan heat oil,let the mustard seeds splutter,add turmeric powder and asafeotida to the chutney,mix well.Ready to serve with rice and others.

RAW BANANA MASALA CHIPS

Fresh and Simple raw banana chips...highly addictive snack,lightly salted and deep fried and shuffled in red chilli powder.These crispy and spicy chips are available elsewhere almost in all grocery store,but instant homemade chips are always healthy and lively.Store this in a air tight container and enjoy with tea/coffee.




Ingredients:

2 Raw Bananas
Red Chilli powder and Salt as needed
Oil for deep frying

Method:

Peel the skin of the banana,best to be soaked salty ice water for about 20 mins.
Later cut the banana's into a slicer and spread them on paper towel to absorb moisture for atleast 20 to 30 mins.


Heat oil and deep fry them into batches to crispy golden brown.


Spread on paper towel,and sprinkle with salt and red chilli powder.

LITTLE HEARTS PASTRIES


Quick n Easy,non- stuffing heart shaped sweet pastries with drizzle of desiccated coconut,granulated sugar and fruit jam on top of it...a simple delicacy.There are varieties of pastries you can make,but this recipe is certainly my version of pastry..just trying to make it in creative way..!



Ingredients:

1 Sheet of Puff Pastry
Desiccated Coconut as required
Granulated Sugar as required
Fruit Jam

Method

Thaw the pastry sheets at room temperature for 20 to 30 mins
Preheat the oven to 350 Degrees F
Give them a shape with the help of a cookie cutter.
Place them on baking sheet and bake them for 15 mins to light golden brown.
Season the baked puffs with coconut,sugar and fruit jam...

BISCUIT/ CHOCOLATE SQUARES

Kid friendly recipe..no baking,no cooking needed,as usual with very less items.
something that looked more than presentable, tasted good, and demands to be made again...tea biscuits,chocolate chunks are churned for seconds,just about about a tsp of ghee and sugar mixed together.Just follow my easy steps of cooking to taste this chocolate rolls.



Ingredients:

8 to 10 Tea Biscuits(regular)
1/2 Cup Chocolate Chunks
1/4 Cup of Powdered Sugar( May adjust according to sweetness)
1 Tsp of Unsalted Butter
Desiccated Coconut
Water as required

Method:

Churn the tea biscuits and chocolate chunks in a grinder to fine powder.




In a mixing bowl,add rest of the items except coconut,make a stiff like dough
with very little water.
Spread the coconut on a tray and roll the dough gently.And wrap the dough in a thin
transparent plastic sheet/ cover.Close the edges tightly and refrigerate for 1 hour.
Unwrap the plastic sheet after 1 hour,and cut the dough in slices.Is that simple?
Try it for sure..

FRIED RICE


Fried Rice is certainly one of my favorite rice dish.Myself gave a twist to this more on indian style binded more with slited green Chilli on additional to Tsp of green Chilli sauce and soy sauce...! Fried rice can be enjoyed with numerous Indian Gravies.As a matter of course,I cook speciality rice dishes in rice cooker to be moisture free when sautéed...the aroma of this rice dish is smacking taste.





Ingredients:

2 Cups Cooked Basmati Rice
1 Serving Bowl full of Mixed Vegetables(carrots,beans,green peas,cabbage)
1 Onion(chopped lengthwise)
4 Crushed Fresh Garlic Pods
1/4 Tsp of Grated Ginger
3 slited Green Chilli
1/2 Tsp Cumin Seeds
1/8 Tsp of Turmeric powder
1 Tsp of Green Chilli Sauce
1/2 Tsp Soy Sauce
1 Tbsp of ghee and oil
Cilantro and salt as needed.

Method:

Boil your choice of vegetables in pressure cooker.But I cook the veggies in rice cooker as mentioned above with basmati rice together.I don't like the veggies to be mushy.Keep the cooked rice ready ( for basmati 2 Cups rice..1 1/4 cup of water)



Saute the onions,cumin seeds,garlic and ginger in a pan with oil and ghee for just a minute,just partially cook is enough.


Add Chilli and soy sauce with little turmeric powder and salt.Mix thoroughly the cooked rice to this.Garnish with cilantro.

EGGLESS VANILLA COOKIES

Yet an other simple low fat baked cookies(eggless),I tried this recipe it is divine.  Easy to make and the cookies are fresh and crunchy,can be stored for couple of days.With very less ingredients to prepare these cookies....every bite from these biscuits are indulging.



Ingredients:

1/2 Cup All Purpose Flour
1/2 Cup Wheat Flour
1/2Cup of Powdered Sugar
1 Tbsp of Butter
1 Tsp of Water
2-3 drops of Vanilla Essence

Method:

In a large bowl,mix flour,water,butter, sugar and vanilla together to make smooth dough.

Shape the cookies and place on an ungreased baking tray.



Bake in a pre-heated oven(350 deg F)for 15-20 minutes.




Note: If you not able to shape the cookies,make sure you add little more butter.

PAV BHAJI

As everybody knows about pav bhaji,nothing more to explain.A well known,popular street food everywhere in India.Your choice of mixed and mashed vegetable gravy,is truly a spicy dish.Soft buns are slightly tossed in butter..it's definitely a great filling snack.I used regular soft burger buns as a best alternate to the pavs.



Ingredients:

3 Potatoes(boiled & mashed)
2 Diced Tomatoes
Finely Chopped Carrots,Capsicum
Minced Ginger Garlic 1/2 Tsp Each
Frozen green peas
3 Tbsps of Butter
MTR Pav Bhaji Masala 2 Tsps
1/2 a Tsp Red Chilli Powder
Salt as per taste
Pav/Burger Buns as required
Chopped cilantro,onions for garnishing.

Method:

Boil or pressure cook the vegetables till soft,mash them and keep aside


In a skillet with a tsp of butter,add onions,tomatoes,g&g paste.Saute them
till trasculent.Add the mashed vegetables to this with green peas.
Mix them well with pav bhaji masala,red Chilli powder,salt.
Garnish with cilantro/onions before serving.Gravy or Bhaji is ready.
Finally,heat a griddle with little butter and roast the buns on both the sides.


These are speciality chats which are good to serve throughout the year.




BROCCOLI FRITTERS

My Todays pick on a snowy day..is something unusual deep fried snack..broccoli fritters.my version is onions to the bunch of chopped broccoli( frozen)with the thick batter of gram flour.Tried for the first time,normally I know only couple of recipes from broccoli,but this is different kind of snack.Often served with hot tomato ketchup/slightly dipped in yogurt....super inviting taste.!





Tip: Sift the gram flow before mixing with the help of strainer for smooth texture of
        the batter.

Ingredients:

Chopped Broccoli Florets 1 Cup( I used frozed pack)
Gram Flour 1 1/2 Cups
Onions 1( cut lengthwise)
Garam masala/ red Chilli powder/turmeric powder 1/2 Tsp Each
Crushed Garlic pod 1
Salt for taste
Water as required
Oil for deep fry

Method:

Mix all the above items except oil by adding very little water to make a thick batter.


I added a Tbsp of warm oil to the mixed batter for an additional crunchy bite.
Heat oil on medium,drop them in oil to round in shape and deep fry to golden brown.Drain on paper towels before serving.




So simple recipe,with unforgettable taste...try it!

PUFFED RICE/NUTS CEREAL

Thinking of a snack to munch during leisure time??? Here it is, this is something innovative,quick and simple recipe, added generously the dry fruits to it, together with that, mainly used ingredients are Puffed rice and cornflakes, mixed to it the jaggery syrup which gives so good in taste,It is definitely a very good snack recipe for munching anytime.Kids gonna love it for sure,since I added colorful gems for the appealing bite.



Ingredients:

Puffed Rice 1 Cup
Cornflakes 1 Cup
Jaggery 1 Cup
Water 1/4 Cup
Roasted Cashews and Raisins as needed( in ghee)
Chocolate Chips just few( optional)
Colorful M&M Gems as required



Procedure:

Make a jaggery syrup,adding water and jaggery in a pan on low heat to sticky syrup,just about for 5 to 10 mins.




Mix puffed rice,cornflakes and dry fruits(roasted in ghee)in a bowl,add the jaggery syrup to this quickly( need to be quick in mixing) as the syrup solidifies within seconds.


Flatten this mixture immediately in a greased tray and don't forget to add the M&Ms on top of it.
Try for sure this recipe,again I'm telling kids will love the soft,crunchy taste.

MIRCHI BAJJI

A excellent appetizer and an evening refreshment Mirchi Bhajji.Long green Chilli peppers with roasted and grounded peanut,cumin seeds and few more spices stuffed in.Since most of them use potatoes for filling,mine gives a distinct taste as I used peanuts.The peppers were too long,so I cut them into half size.


Ingredients:

Long Green Peppers 6

For Stuffing:

Crushed peanuts( roasted) 2 Tpa
Cumin seeds 1 1/2 Tsp
Dalia or split chick peas 3 Tsos
Asafeotida 1/2 Tsp
Coriander seeds 1/2 Tsp
Salt little.

For Coating or Batter

Gram Flour-1 cup
Rice powder-1/4 cup
Water-1/2 cup
Red Chilli powder 1/4 Tsp
Salt to taste

Oil for deep fry.

Method:

Grind all the spices for filling to coarse.




Partially slit the long green peppers and stuff the grinded spices just a 1/2 tsp.


Mix the gram flour and rice flour adding little quantity of water with red chilli powder and salt.The batter should be medium consistency.
Heat the oil on medium heat.Dip the stuffed long peppers into the batter for coating.
Deep fry them in the oil to crispy brown.

HOMEMADE TOMATO SOUP

A simple soup that can be made in no time and has super delicious flavor, that is none other than popular tomato soup. Nothing tastes like home made fresh tomato soup which is a great appetizer with easy method. Add more crushed black pepper for a real spicy taste to the blended tomato purée,and bit of fresh cream on top of it,gives mouthwatering hot soup.





Ingredients:My serving gives is for two people

Large size Tomatoes 5(diced)
Onion 1
Grated ginger 1/4 tsp
Grated garlic 1/2 tsp
Green chili 1
Butter 2 Tbsps( May add more for extra buttery taste)
Crushed black pepper powder as per taste
A Cup of Water
Salt to taste
Bread Crountons(just few pieces,fried them with little tsp of butter)
Fresh heavy cream for topping

Method:

1. Heat the butter, in a large saucepan and saute the tomatoes,onion,Chilli ginger,garlic until they are translucent, about 5 minutes.Add a cup of water to this,make sure they are not overcooked.Turn off the heat and allow it cool.






2. Pour this into jar to make fine tomato purée.Strain this purée into large bowl.
    Boil the purée in a heated pan on low heat for just 2 mins.Bring down from heat,
    add salt,more butter and heavy cream( as per your taste).


3. Before serving drizzle with black pepper powder,fresh cream and fried bread
    bread croutons for additional taste.





My Tip: Since this soup is more on sweeter,adding more pepper is really gives a
              soothing relief.
