GOBI MANCHURIAN


A Very popular Indo Chinese starter recipe Gobi Manchurian,the taste itself so irresistable & so undeniable.Cauliflower florets are coated in a thick batter,deep fried and marinated with varieties of tangy sauces.....so spicy...!!...yummy...
Always wanted to add this recipe in my blog....and is a must appetizer in any menu platter in any restaurants..



Ingredients:

For Batter:
1 Medium Size Cauliflower cut into florets(immerse the cauliflower into hot water and a pinch of salt for about 15 minutes before cutting)
6 Tbsps of All Purpose Flour/Maida
4 Tbsps of Cornflour
2 Tbsps of Rice Flour for Crisp(optional)
1/2 Tsp of minced garlic
Salt as needed
Water to make thick batter
Oil for deep fry.

For the Gravy;
Minced Garlic - 4 Tsps
Grated Ginger 1/2 Tsp
Chopped Spring onion
Finely Chopped A piece of Capsicum( optional )
Finely Chopped Onion - 1
Green Chilli sauce - 1 tsp
Soya sauce - 1/8 tsp
Tomato sauce - 6 to 8 Tsps
Chopped Cilantro
Oil/ghee 2 tsps each.
Sugar 1 Tsp



Procedure:

1. Mix all the batter ingredients in a bowl,make a thick batter.
    Saturate the florets into the batter.

2. Heat oil to medium high,deep fry the florets to golden brown.

3. Heat oil and ghee in a separate pan,add chopped onions,capsicum,ginger garlic.
    Saute till transculent,add all sauces,sugar and chopped cilantro.
    Mix well for just a minute.

4. Add the fried Florets into the sauces to fine texture..
5. May add red Chilli powder( I did not use)
6. To be garnished with more chopped cilantro and serve them.

PANEER BUTTER MASALA

A perfect North Indian Gravy served with parathas,main ingredient is paneer moistened in fresh blended spices and herbs.


Ingredients:

200 grams of paneer cubes
3 Diced Large Tomatoes
2 to 3 Chopped Onions
1 Tsp finely chopped fresh ginge
5 to 6 minced garlic
    12 to 15 cashews nuts( I soaked them in water for 30 mins)
    2 to 3 chopped green chilies
    1 Bay leaf ( optional)
    3/4 Tsp of coriander powder
    1 Tsp of Red Chilli powder
    3/4 Tsp Garam Masala powder
    Kasuri Methi as per your taste
   Coriander leaves( handfull)
    3/4 cup of fresh milk
   2 1/2 cups of fresh cream
   1 to 2 Tbsps of Butter and oil ( equally )
   Salt to taste
   A pinch of sugar( optional)
   Butter for garnishing

Directions

Sauté tomatoes,onions,ginger garlic with little oil in pan till the raw smell is gone.
Grind the above to a fine paste by adding soaked cashews,kasuri methi,green chilies and coriander leaves.
Heat a pan,add oil and butter,add the above grinded stuff.
Cook them by adding Garam masala,red Chilli powder,dhaniya powder
Add milk and pannercubes,cook them on a low flame
Finally mix with cream,salt and sugar.
Good to go with parathas,chapthi,etc.

Oatmeal Cookies

Oatmeal Cookies(eggless)

        


Ingredients

3 cups Oats(uncooked)
1 cup granulated sugar
3/4 cups dark brown sugar
3/4 cup all purpose flour
1/2 cup coconut powder
1 stick unsalted butter
1 tsp of vanilla extract
Pinch of cinnamon powder
Pinch of salt
1/2 tsp of Baking soda

Directions

Preheat oven for 350 deg..

Take a large bowl,beat sugar,brown sugar,butter,vanilla,baking soda,salt until fluffy.
To this,add flour,oats..mix again.
Take a tsp of dough and drop them on a ungreased baking sheet.
Bake them about for 8 to 10 minutes till light golden brown.
Let the cookies to cool down..done!Is that easy delicious cookies ready ..

White Chocolate Fudge

On Demand Recipe from my li'l helpers( my kiddos) on Valentine's Day...My first ever start over dessert recipe after a long break.....Soft,creamy/ milky fudge with the melt of white chocolate( which is my favorite)..and kids too..few rainbow sprinkles on top of it..Easy recipe for the chocolate lovers..!



Fewer Ingredients..

1 (14OZ)Can Sweetened Condensed Milk( I used half can)
1 1/2 Cups of White Chocolate Chips
1/4 tsp of Vanilla Extract
Rainbow Sprinkles.

Method:

Transfer the condensed milk and chocolate chips into a microwave safe bowl.Heat for 2 minutes till chocolates are melted..stir completely to smooth texture..add few drops of vanilla and rainbow sprinkles.Immediated transfer to greased baking pan and allow it cool in the refrigerator for an hour.
Later make them into your desired shape..

Pizza Dosa

A healthiest recipe made from leftover Dosa batter,seasoned with your choice of colorful veggies and cheese.Taste more like Pizza,great menu for kids lunch box..and as well as Breakfast serving too.




Ingredients:

Dosa Batter
1/2 Cup Finely Chopped Tomatoes
1/2 Cup Chopped Onions
1/2 Cup Chopped Capsicum
1/2 Cup Grated Carrots
Chopped Green Chilli 2 to 3
Grated Cheese or Cheese Slices
Ghee and oil

Method:

1. Heat the dosa griddle and grease a tsp of oil.
2. Spread a ladle full of batter on medium flame.
3. Spread ghee or oil around the corners and add your desired veggies,cover it and cook for a minute
4. Now gently flip it for few seconds.
5. Finally add grated cheese or slice.Serve with ketchup .

SEV PURI

I'm not a huge fan of Chaats...and there are plenty of savory Chaats to refer,Sev Puri is among them.Puffed mini puri's are stuffed with tomatoes,potatoes,onions and so on.Toppings on Chaats are main ingredients for the savory and spicy taste,for Sev Puri sweet chutney,green chutney is a must item required.








Ingredients:
For Puffed Puri's( makes 12 to 14 puri's)

4 Tbsps of All Purpose Flour
1  1/2 Tbsps of Fine Semolina
Salt and water to knead
Oil to deep fry

For Stuffing:

1 Boiled,peeled and mashed Potato
1 Diced Tomato
1 Onion Chopped Finely
1 Tsp of Chaat Masala
Chopped Cilantro
2-3 Tsps of Sweet Chutney and Green Chutney
Fresh Lemon Juice
Salt to taste
Sev as needed

Method:

Make a stiff dough and set aside for 15 to 20 mins.


Roll the dough on a clean surface,make sure they are not thick in size.
With the help of any small size bottle caps,make mini poori's as shown in picture.



On medium heat,deep fry in oil
Gently take out the top layer to stuff the items.keep aside
First layer the mashed potatoes,onions,tomatoes,green chutney,sweet chutney,
Chaat masala,lemon juice,salt.
Final topping is Sev and Cilantro.Enjoy the taste.

ASH GOURD/WINTER MELON HALWA

Today relishing with a tender & glossy sweet dish Ashgourd halwa/winter melon halwa.This sweet dish is normally made during festive season,especially in Karnataka and served in most of time during weddings too. Good choice to fulfill your cravings than pampering your taste buds with a superior dessert.





Ingredients:


2 cups grated/ winter melon
3/4 cup sugar as needed
2 Tbsps ghee
1/8 cup milk
pinch of cardamom powder
Roasted in ghee nuts, raisins as per taste.
Food Color ( optional)

Method:

Remove the skin of the winter melon and finely grate.Squeeze the excess water and set aside.
In a pan add everything,keep on stirring until the winter melon turns soft,and excess water is evaporated.




Add the cardamom powder and food color. Garnish with nuts and raisins.

CORIANDER CHUTNEY

Coriander chutney is something unique in taste...myself happened to try this recipe from my mother.And as a matter of fact,green leaf veggies are very rich in nutrients,but I was not aware that coriander leaves has high contents of iron too.
This chutney is best combination for rice and other breakfast recipe.



Ingredients:

1 Fresh Bunch of Coriander Leaves
2 Tbsps of a Dry Coconut
1 Tsp of Cumin Seeds
1  Tsp of Tamarind Paste
4 to 5 Green Chilli
1 Tsp of Jaggery
Salt

For Seasoning:

1 Tsp Oil,mustard seeds,turmeric powder and Asafeotida.

Method:

Clean the coriander leaves and strain the water.Grind all the items listed above ( not the seasoning )to fine paste.Add little water.


In a heated pan,Saute the grinded chutney for about 5 mins...
In other pan heat oil,let the mustard seeds splutter,add turmeric powder and asafeotida to the chutney,mix well.Ready to serve with rice and others.

RAW BANANA MASALA CHIPS

Fresh and Simple raw banana chips...highly addictive snack,lightly salted and deep fried and shuffled in red chilli powder.These crispy and spicy chips are available elsewhere almost in all grocery store,but instant homemade chips are always healthy and lively.Store this in a air tight container and enjoy with tea/coffee.




Ingredients:

2 Raw Bananas
Red Chilli powder and Salt as needed
Oil for deep frying

Method:

Peel the skin of the banana,best to be soaked salty ice water for about 20 mins.
Later cut the banana's into a slicer and spread them on paper towel to absorb moisture for atleast 20 to 30 mins.


Heat oil and deep fry them into batches to crispy golden brown.


Spread on paper towel,and sprinkle with salt and red chilli powder.

LITTLE HEARTS PASTRIES


Quick n Easy,non- stuffing heart shaped sweet pastries with drizzle of desiccated coconut,granulated sugar and fruit jam on top of it...a simple delicacy.There are varieties of pastries you can make,but this recipe is certainly my version of pastry..just trying to make it in creative way..!



Ingredients:

1 Sheet of Puff Pastry
Desiccated Coconut as required
Granulated Sugar as required
Fruit Jam

Method

Thaw the pastry sheets at room temperature for 20 to 30 mins
Preheat the oven to 350 Degrees F
Give them a shape with the help of a cookie cutter.
Place them on baking sheet and bake them for 15 mins to light golden brown.
Season the baked puffs with coconut,sugar and fruit jam...

BISCUIT/ CHOCOLATE SQUARES

Kid friendly recipe..no baking,no cooking needed,as usual with very less items.
something that looked more than presentable, tasted good, and demands to be made again...tea biscuits,chocolate chunks are churned for seconds,just about about a tsp of ghee and sugar mixed together.Just follow my easy steps of cooking to taste this chocolate rolls.



Ingredients:

8 to 10 Tea Biscuits(regular)
1/2 Cup Chocolate Chunks
1/4 Cup of Powdered Sugar( May adjust according to sweetness)
1 Tsp of Unsalted Butter
Desiccated Coconut
Water as required

Method:

Churn the tea biscuits and chocolate chunks in a grinder to fine powder.




In a mixing bowl,add rest of the items except coconut,make a stiff like dough
with very little water.
Spread the coconut on a tray and roll the dough gently.And wrap the dough in a thin
transparent plastic sheet/ cover.Close the edges tightly and refrigerate for 1 hour.
Unwrap the plastic sheet after 1 hour,and cut the dough in slices.Is that simple?
Try it for sure..

FRIED RICE


Fried Rice is certainly one of my favorite rice dish.Myself gave a twist to this more on indian style binded more with slited green Chilli on additional to Tsp of green Chilli sauce and soy sauce...! Fried rice can be enjoyed with numerous Indian Gravies.As a matter of course,I cook speciality rice dishes in rice cooker to be moisture free when sautéed...the aroma of this rice dish is smacking taste.





Ingredients:

2 Cups Cooked Basmati Rice
1 Serving Bowl full of Mixed Vegetables(carrots,beans,green peas,cabbage)
1 Onion(chopped lengthwise)
4 Crushed Fresh Garlic Pods
1/4 Tsp of Grated Ginger
3 slited Green Chilli
1/2 Tsp Cumin Seeds
1/8 Tsp of Turmeric powder
1 Tsp of Green Chilli Sauce
1/2 Tsp Soy Sauce
1 Tbsp of ghee and oil
Cilantro and salt as needed.

Method:

Boil your choice of vegetables in pressure cooker.But I cook the veggies in rice cooker as mentioned above with basmati rice together.I don't like the veggies to be mushy.Keep the cooked rice ready ( for basmati 2 Cups rice..1 1/4 cup of water)



Saute the onions,cumin seeds,garlic and ginger in a pan with oil and ghee for just a minute,just partially cook is enough.


Add Chilli and soy sauce with little turmeric powder and salt.Mix thoroughly the cooked rice to this.Garnish with cilantro.

EGGLESS VANILLA COOKIES

Yet an other simple low fat baked cookies(eggless),I tried this recipe it is divine.  Easy to make and the cookies are fresh and crunchy,can be stored for couple of days.With very less ingredients to prepare these cookies....every bite from these biscuits are indulging.



Ingredients:

1/2 Cup All Purpose Flour
1/2 Cup Wheat Flour
1/2Cup of Powdered Sugar
1 Tbsp of Butter
1 Tsp of Water
2-3 drops of Vanilla Essence

Method:

In a large bowl,mix flour,water,butter, sugar and vanilla together to make smooth dough.

Shape the cookies and place on an ungreased baking tray.



Bake in a pre-heated oven(350 deg F)for 15-20 minutes.




Note: If you not able to shape the cookies,make sure you add little more butter.
